Having fallen in love with the banana fritters I wolfed down at the Adelaide Night Noodle Markets, I felt compelled to make a healthy alternative which I could consume on a daily basis at home. I admit I am using the term ‘fritters’ here rather loosely as these bananas are coated in cinnamon and vanilla extract rather than oil, but they still have that delicious cooked-banana texture and taste even better with a drizzle of honey yoghurt.
Serves 2
Ingredients:
2 x ripe bananas (not overly ripe, but avoid any green on the peel)
1 tsp cinnamon
2 tsp vanilla extract
Extra cinnamon and honey yoghurt to serve (Paris Creek organic and biodynamic bush honey yoghurt goes perfectly)
Method:
-
Heat a non-stick frying pan over medium heat, or if you don’t have a non-stick frying pan just use a spray of canola oil in any regular pan.
-
Peel bananas and slice in half lengthways. Place bananas in the frying pan and drizzle over the vanilla extract and cinnamon.
-
After 2-3 minutes, flip over the bananas. The cooked side should be golden brown and soft. After another 2-3 minutes, remove the bananas from the frying pan and serve with extra cinnamon and honey yoghurt, enjoy 🙂
